Teriyaki

INGREDIENTS

  • 1/2 cup Soy Sauce
  • 1/3 cup water
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon minced garlic
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons warm water
  • 1 pound ground turkey or ground chicken
  • 1 teaspoon onion powder
  • 2 teaspoons minced garlic
  • 1 1/4 cups finely chopped broccoli
  • 2 large carrots (peeled and grated)
  • 2 green onions (diced, for garnish (optional))

Directions

Step 1: Mix soy sauce, water, rice vinegar, sugars, garlic, and ginger in a small saucepan over medium heat. Stir with a whisk until sugar is dissolved.

Step 2: In a small bowl, whisk together 2 tablespoons of warm water and cornstarch until the cornstarch is completely dissolved.

Step 3: Heat the sauce over medium-high heat. Slowly whisk in cornstarch mixture and simmer until thickened. Remove from heat and set aside.

Step 4: In a large skillet over medium-high heat add ground turkey (or chicken), onion powder, and garlic, cook until the meat is no longer pink. Add grated carrots and chopped broccoli and stir well.

Step 5: Pour teriyaki sauce over the cooked meat mixture and stir. Simmer for 8-10 minutes.

Step 6: Spoon meat over rice. Garnish with green onions and serve immediately.


Spam Musubi

INGREDIENTS

  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons mirin
  • 1(12-ounce) can of Spam, diced
  • 2 cups hot cooked rice
  • Fried eggs, if desired
  • Suggested toppings: green onions, furikake, Japanese-style mayo

Directions

Step 1: In a small bowl, combine soy sauce, brown sugar, and mirin.

Step 2: In a skillet over medium-high heat, cook diced spam 3 to 5 minutes, or until browned and crisped. Stir in the soy mixture. Cook 1 to 2 minutes or until the spam is glazed.

Step 3:In individual serving bowls, divide rice. Top each with diced spam, egg, and suggested toppings.


Tapa

INGREDIENTS

  • 1 lb. of horse meat sliced into thin pieces.
  • 1 head garlic, crushed
  • ½ cup soy sauce
  • ¼ teaspoon ground black pepper
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • ¾ cups water
  • 1 ½ cups lemon lime soda
  • 4 tablespoons cooking oil
  • 4 cups leftover rice
  • 3 eggs beaten
  • 1 onion minced
  • ¼ cup green onion chopped
  • 1 red bell pepper, minced
  • 3 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 1 teaspoon salt, optional

Directions

Step 1: Start making the tapa by combining garlic, soy sauce, salt, and ground black pepper in a bowl. Stir. Add the meat and mix well. Cover the bowl and refrigerate for at least 3 hours.

Step 2: Slice the meat into thinner and smaller pieces as needed. Arrange it in a pan and pour in water and cooking oil. Let boil.

Step 3: Add the lemon lime soda. Continue cooking uncovered until the liquid completely evaporates.

Step 4: Fry the tapa in remaining oil for 2 minutes. Remove from the pan and set aside.

Step 5: Make the egg fried rice by frying the eggs in the remaining oil.

Step 6: Once completely cooked, cut the eggs into smaller pieces using your spatula.

Step 7: Add onion, half of the green onions, and bell pepper. Cook for 2 minutes while continuously stirring.

Step 8: Put the leftover rice into the pan and then toss until all the ingredients are well distributed.

Step 9: Add soy sauce and sesame oil. Continue to stir-fry for 3 to 5 minutes. Note: You may add salt if needed.

Step 10: Top with remaining green onions. Transfer to a serving plate and serve with the fried tapa. Share and enjoy!
